Zyme-O-Clear Plus Liquid was developed for clarification and must extraction which preserves the freshness and aromatic qualities of the grapes. It increases yield when added to the press and improves compaction of the lees, resulting in smaller losses at racking.
Zyme-O-Aroma Plus increases the free volatile terpenes in white wine to enhance aromatic intensity and fruit character even in “non-aromatic” varieties.
Zyme-O-Color Plus Liquid optimizes the extraction of intracellular compounds such as tannins, anthocyanins and aroma compounds from the skins during maceration, improving color extraction and stability (especially when used in conjunction with Color-Tan). It also enhances mouthfeel, structure and fruit character without an increase in bitterness and improves filterability, particularly in Pinot Noir and Merlot.

Zyme-O-Xtra is a highly active pectolytic enzyme preparation produced by classic fermentation of selected strains of Aspergillus niger. The Zyme-O-Xtra has significant pectin-lyase and arabanase.
